Ceremony and serving of afternoon tea was started by the Duchess of Bedford in the early 19th century. She said to have complained of “having that sinking feeling” during the late afternoon and decided to take a pot a tea and a light snack privately in her boudoir during the afternoon. Subsequently, she invited her friends in her rooms at Woburn Abbey. This practice was a great success and the Duchess continued it, sending cards to her friends asking them to join her for “tea and a walking the fields”.

Today, this pause for tea has become a fashionable social event for not just upper classes to join in but for everyone. Usually tourists think that we are a nation where, in the words of the well-known song, “at half past three, everything stops for tea”. Our Afternoon tea starts with savoury finger-sized smoked salmon, cucumber, or egg and mustard cress sandwiches – followed by scones with jam and cream (clotted cream made in Devon), and finally a selection of cakes and tea, each of which has been chosen to compliment the delicate flavours from the kitchen.Tea is served from heavy, ornate, silver teapots into delicate bone china cups.
